LT #11 Broodje bal

Via Stickydate [1] I came across the foodblogevent Leftover Tuesdays [2]. This event is all about creating new dishes out of your leftovers. A source of inspiration for a student like me. So why not compete? I made a Broodje bal inspired by a recipe of Ramon Beuk [3].

Yesterday I made meatballs to serve with some vegetables and potatoes, a common thing here in the Netherlands. But I had one meatball leftover. Another typical thing in the Netherlands is to serve a meatball on bread with some mustard, this is a snack called a Broodje bal. I wanted to create a Broodje bal but with a twist. After a short search I came across a Bread filled with meatballs recipe of TV chef Ramon Beuk [3].

I also filled the white bread with little meatballs. But in my case the meatballs were already braised so the preparation didn’t take any longer than 10 minutes. I served them with a creamy mustard sauce, rocket and cherry tomatoes.

Ingredients (serves 2)

4 little meatballs (leftover, already braised)
4 slices of white bread
20 gram rocket
50 gram cherry tomatoes
1 tbsp mayonnaise
1 tbsp mustard
1 tbsp olive oil
1 tbsp yoghurt

Preparation

Preheat a oven on 180 degrees Celcius. In the meanwhile remove the crust of the bread. Fill each of the slices of bread with one meatball and create four round packages. Moist the packages with a little bit of water and put them in the oven. In about 10 minutes you will have a nice outher crust of bread surrounding the meatball. I also made a creamy mustard sauce by mixing the mayonnaise, mustard, olive oil and yoghurt. Serve the meatballs with some rocket, cherry tomatoes and the mustardsauce.
