The pairing is pumpkin &#038; cooked chicken. I made a sandwich, inspired by <a href="http://edibleventures.blogspot.com/2009/10/savory-pumpkin-bread.html">Edibele Ventures</a>.<br />

<p>The ingredients that need to be paired were pumpkin and cooked chicken. First thought was to make a soup. Easy and quick. Later on I actually made the soup from leftover pumpkin, I will post this recipe later on. The second idea was to create a pumpkinbread, a savory one. And create and nice autumn sandwich with the chicken.</p>
<p>It was a whole proces to actually create this sandwich. First I had to cook the chicken. I boiled it in beef stock, a cooking method I don&#8217;t ordinarely use. After that I created the pumpkin bread. This took me more than a day because the rising of it and the lack of time before baking it. This however did improve the result, the rises were great. Together with some nice cheese, carrot and lettuce the sandwich turned out to be great. <p class="ingredientheader">Ingredients (serves 4)</p>
<p class="ingredienten">half a pumpkin<br />
500 grams wheat flour<br />
sunflower seeds<br />
25 grams butter<br />
7 grams of active dried yeast<br />
salt<br />
200 grams chickenfilet<br />
beef stock<br />
1 carrot<br />
150 grams port salut<br />
lettuce</p>
<p class="bereidingheader">Preparation</p>
<p>For the pumpkin bread remove the skin from halve a pumpkin and chop it into pieces. Grate pumpkin pieces, I used a food processor. Mix the wheat flour together with about 200 ml of water, butter and yeast in a bowl. Add the grated pumpkin and other ingredients to your likings, in my case some sunflower seeds. </p>
<p>Knead the bread till you get a dough with some nice texture. I always check it by putting a small hole in the dough with my thumb. If it is elastic enough the hole will dissapear. Cover the bowl with plastic wrap and put it away at a warm place. Let it rise for a couple of hours. In my case this was more than a couple, actually a whole night.</p>
<p>After the first rise you can knead it a bit and put it in a loaf pan. Cover it with plastic wrap again for a second rise. Again this was in my case quite a while, certainly a whole night again. After that I baked the bread in an oven of 200 degrees celcius for about 35 minutes. </p>
<p>For the spread I only had to boil the chicken in stock. I used chickenfilet and bioled it in beef stock for about 30 minutes. I had three slices of pumpkin bread for the sandwich. One was covered with cooked chicken and grated carrot. The second one was covered with a cheese called Port Salut and lettuce. And of course the third slice was for the top of the sandwich.</p>

They give me energy to try different things. This time I entered TGRWT again hosted by <a href="http://aidanbrooks.blogspot.com/2009/07/announcing-they-go-really-well-together.html">Adain Brooks</a>.<br />

<p>The challenge this edition was to pair blue cheese &#038; plum. On top of that he wanted another challenge, to try to create a dessert preferably with two other flavors incorporated. If you want to know more about the challenge I can recommend going to Adains site or read one of my previous blog posts on <a href="http://www.kookjegek.nl/archives/category/tgrwt">TGRWT</a>.</p>
<p>First thing that came to mind was a rice pudding, inspired by <a href="http://nl.wikibooks.org/wiki/Kookboek/Rijstebrij">Wikipedia</a>. I had a lot of spare rice due to the fact whe bought to much for the <a href="http://www.kookjegek.nl/archives/379">paella</a> last wednesday. I flavored the pudding with Bleu D&#8217;Auvergne cheese and lemon zest and served it with a plum &#038; apricot coulis with some thyme. </p>
<p>I&#8217;m pretty happy with the end result. I like to try this with different cheeses and fruits in the future.</p>

<p class="ingredientheader">Ingredients (serves 4)</p>
<p class="ingredienten">150 grams risotto rice<br />
150 grams Bleu D&#8217;Auvergne AOC 50+<br />
1 liter milk<br />
1 lemon<br />
250 grams plums<br />
250 grams apricots<br />
100 ml white wine (in my case an Argentinian Sauvignon Blanc 2008)<br />
50 grams sugar<br />
thyme</p>
<p class="bereidingheader">Preparation</p>
<p>Boil the milk in a pan together with zest of one lemon. Add the rice lower the heat and slowly cook until the rice is soft and you get a thick texture. For me this was after one hour. During that period I stirred the mixture every 15 minutes. Add the end I added the pieces of cheese.</p>
<p>I also made some coulis. Remove the pits from the plums &#038; apricots. Add it to a blender and turn it into a purÃ©e. Put the purÃ©e into a frying pan together with the wine, sugar &#038; fresh thyme leaves. Heat it for about 10 minutes. After that strain the mixture through a fine sieve.</p>

			<content:encoded><![CDATA[<p>Considering the fact that I only noticed the newest round of <a href="http://blog.khymos.org/2008/10/02/tgrwt-11-banana-and-cloves">TGRWT</a> just a few days ago I had to come up with a dish quickly. During this round the combination was banana &#038; cloves. I made a banana chutney with yoghurt &#038; chicken inspired by a recipe from <a href="http://www.bbc.co.uk/food/recipes/database/bananachutney_4612.shtml">Lee Cox</a> from masterchef &#038; <a href="http://www.ah.nl/recepten/recipe.jsp?id=462490">Allerhande</a>.<br />

<p>When I came across the recipe of Lee Cox I new I wanted to make a <a href="http://en.wikipedia.org/wiki/Chutney">chutney</a>. In his recipe he used allspice and I replaced it by the cloves. I also used red onions because they are a bit sweeter. I liked the sweetness of the banana &#038; red onion together with the distinct flavor of the clove. Although I used a tablespoon, which in my opinion is a lot, it worked for me as a combination. Together with the yoghurt it was a great starter. I can imagine with some rice you can also turn this into a main course.</p>

<p class="ingredienten">3 bananas<br />
1 red onion<br />
1 tbsp clovespowder<br />
25 ml white wine vinegar<br />
greek yoghurt<br />
200 gram chickenfilet</p>
<p class="bereidingheader">Preparation</p>
<p>Fry the diced onion in a pan with some olive oil. After a few minutes add the slices of banana and fry it all until the banana is collapsed. Now it&#8217;s time to add some extra flavor. I also used the vinegar and of course the cloves. I used whole cloves and grounded it into powder with my mortar. </p>
<p>After that I fried some chicken and served it together with the chutney and some greek yoghurt.</p>

During round <a href="http://www.eatfoo.com/archives/2008/03/tgrwt_10_pineapple_and_blue_ch.php">#10</a>, hosted by <a href="http://www.eatfoo.com/">EatFoo(d)</a>, we had to combine pineapple and blue cheese. I made a parfait of Danish blue and served it with caramalized pineapple.<br />

<p>I wanted to create a dessert. First thing that came into mind was a parfait. I recently made a <a href="http://www.kookjegek.nl/archives/241">strawberryparfait</a>, but a savory one of cheese was a real challenge! The idea was to serve it with caramalized pineapple.</p>
<p>After a short preparation I was ready for the tasting part of this challenge. First of all I like the idea of a savory parfait. It gives the ice a out of the ordinary taste. I&#8217;m certainly gonna create more savory ice creams. Together with the sweet caramalized pineapple it really worked as a combination. The sweetness of the pineapple goes well with the specific taste of danish blue. I&#8217;m really happy with the result!</p>

<p class="ingredienten">120 grams brown sugar (white color)<br />
2 eggs<br />
50 grams Danish blue cheese<br />
200 ml crÃ¨me fraÃ®che<br />
pineapple</p>
<p class="bereidingheader">Preparation</p>
<p>First of all I made the parfait. Put the 80 grams of sugar together with 80 ml of water in a cooking pot and heat it. Stir two egg yolks. Put the sugarwater over a <a href="http://en.wikipedia.org/wiki/Bain_marie">double boiler</a> and add the yolks while stirring. Let the creamy mixture cool down. Gently fold some Danish blue cheese and crÃ¨me fraÃ®che into the mixture. Poor the mixture into some small bowls and refrigerate it for about 3 hours.</p>
<p>I served the parfait on top of some caramalized pineapple slices. Cover the pineapple slices in the rest of the brown sugar. And heat them in a frying pan with some butter. After a few minutes you have nicely caramalized pineapple. I added some pineapple juice to the frying pan and created pineapplesyrup.</p></div>

			<content:encoded><![CDATA[<p>Today it was time to start cooking for my favorite foodblogevent <a href="http://www.kookjegek.nl/archives/category/tgrwt">They Go Really Well Together</a>. During round <a href="http://www.kookjegek.nl/archives/230">#9</a> we have to combine Parmesan cheese and cocoa. I made Parmesan-chocolatetruffles.<br />

<p>I had made <a href="http://www.kookjegek.nl/archives/184">chocolate truffles</a> before, a <a href="http://en.wikipedia.org/wiki/Chocolate_truffle">Swiss type</a> of truffle. So when <a href="http://lamiacucina.wordpress.com/2008/02/04/tgrwt-9-parmesan-and-cocoa/">TGRWT #9</a> was announced I wondered if I could use Parmesan cheese for those truffles. The result was great! The salty flavor of the grated Parmesan cheese tastes great in combination with the dark chocolate ganache of the chocolate truffle. Definitely a combination that works!</p>

<p class="ingredientheader">Ingredients (12 truffles)</p>
<p class="ingredienten">50 ml whipping cream<br />
100 grams dark chocolate (72% cocoa)<br />
50 grams butter<br />
40 grams grated Parmesan cheese</p>
<p class="bereidingheader">Preparation</p>
<p>First of all I made the ganache. Put the cream in a cooking pot and heat it. Remove the pot from heat and add 65 grams of chocolate, butter and 1 teaspoon of Parmesan cheese. Stir until the ganache is smooth of <a href="http://en.wikipedia.org/wiki/Texture_%28food%29">texture</a>. Cover and refrigerate the ganache for at least 2 hours. You can occasionaly stir the ganache in the meanwhile. When the ganache holds shape you can create 12 round truffles.</p>
<p>Put the rest of the chocolate in a bowl and set over a <a href="http://en.wikipedia.org/wiki/Bain_marie">double boiler</a>. Heat until melted and smooth. Put the rest of the grated Parmesan cheese in another bowl. Roll each truffle first in the melted chocolate and afterwards in the grated cheese. Set the truffles on a tray and refrigerate them before serving.</div>
